Check in rso2 the datasources tables and build your DSO based on those keyfields. You are probably good if you take as key document number and item. Design the cube accordinglinly. You might be able to copy some of the design of the cube on 0PCA_C01.

Yes use the infoobject which are also in use with the 0EC_PCA_1 flow..

It only helps for mapping

Depends on your reporting requirements. Build the DSO as wide as the datasource is and bring to cube level what enduser needs for reporting.
